Swai Fish with rice July 31, 2015

I have never eat or cook fish called Swai until today. I decided to give it a try. And the result was better than I thought.

Here is the recipe:

Ingredients:

Boneless, skinless Swai fish, about a pound.

1/ 2 lemon or lime juice for cooking, 1/2 lemon juice for serving.

1 teaspoon Basil, 1/2 teaspoon Black pepper

1/2 teaspoon Salt

2 table spoon Olive Oil

1 table spoon of bread crumbs

How to:

Place fish on a shallow pan, add olive oil, black pepper, basil, salt and 1/2 of lemon juice.

Cover for 2 minutes,  check to see if the fish is tender, cook for another 3 minutes uncover or until all the juice and liquid evaporate. Sprinkle on top with bread crumb, cook until golden as you can see in the picture.  Flip carefully not to disturb the shape of the fish, taste it, add salt if desire.

Place on a flat dish on a bed of rice, add the remaining lemon juice on top of fish, garnish with vegetable of your choice. In my case, I like Broccoli and Carrot as picture above.

Tomato Kettle-Chips sandwich

This sandwich is very light, perfect for hot summer months. Thinly slice zucchini can be added on top of tomato if so desire)

Ingredients:

Two slices of bread lightly toasted, (Sour dough or oat nut bread are my favorites)

Large tomato, thickly slice dash with salt, black pepper and olive oiltchips sandwich1

About nine pieces of kettle-chips any flavor (my favorite is Jalapeño Kettle Chips)

Mayo of your favorite or butter

Fresh basil.

How to:

1. Toast bread lightly, and brush with mayo or butter

2. Arrange 2 large slices tomato on top of the bread, top with potato chip.

3. Garnish with basil

4, Enjoy

 

Egg Plant July 30, 2015

Ingredients:

1 Medium egg plant (about 1 Lb), slice as desire but no thinner than 1 inch in thickness, or cut as cube.

1 table-spoon cup tomato ketchup,

3 table-spoon cooking oil,Eggplant2

Mozzarella Parmesan. baby swiss and/or Mexican style cheese for topping

Fresh basil or parsley for garnish

1 half cup of water, dash of salt, black pepper, and pinch of sugar – Bring these mixture to boil.

Choice of Rye or Sour Dough Bread to complete the meal.

The way to cook;

Toss egg-plant in a boiling water mixture above, cover for about 3 minutes, drain excess water,

add cooking oil and tomato ketchup, cover for another 3 minutes,  stir, taste, at this time, I will add salt and/or sugar

to my taste.

Serve on a large plate, top with cheese, garnish with fresh basil or Parsley and rye bread.

(By all account, I am not an expert in growing flowers,

information I am sharing with you are from my own experience)

Pictures on this page are my own pictures of hydrangeas that I was able to successfully grow in my own backyard without testing dirt for PH level, without using rooting hormone or other chemical elements. Its just plain stem and H2O.

In my small insignificant way, I am trying to help keep our earth clean.

 

 

Things you need:

1. A stem of hydrangea (cut with sharp knife or scissors, bare lower half of the stem so  you could stick it to the ground).

2. Shady yard

3. Lots of water

How to:

Cut the stem in a diagonal fashion, stick it to soft, moist flowerbed in a shady area of your yard. (Hydrangea dislikes sun)

Better yet if you have a large tree, and create a circular flowerbed around that tree, and plant them there.

Water the newly planted hydrangea generously, every day for about 6 weeks. You will see your flower progressing, the old leaves will dry out and fall to the ground and new one will sprout around that stem. Before you know it, it will grow bigger and display its beautiful flowers.
